A super easy vegetarian, vegan, delicious Mediterranean weeknight meal with room for lunch leftovers the next day. It's now a favorite dish at home.
I’m pretty used to over-complicating things in the kitchen. The idea that “more is more and less is a bore” was kind of an unspoken rule in my world, so that’s how I cooked and served the vast majority of my meals. Once I realized how much the overwhelm was causing me complete and unnecessary exhaustion (among other frustrations), I decided to adopt a much simpler way of cooking in the same ways experienced on my travels abroad. Admittedly, it’s not always the easiest to adopt back home sometimes because of a lack of fresh daily or weekly markets, with some good planning and kitchen efficiency, it really is doable.
That said, I don’t mean to say that simple means less ingredients or short cooking times; to me it means less complicated techniques and fewer steps in cooking.
